Green Chile Recipes


  • Green Chile Stew


In a large, 4 to 6 quart saucepan warm the vegetable oil over medium heat. Add the cubed round steak, cubed pork, and chopped onions. Saute until the meat has been browned and the onions have become tender.

Add the 2 cups water and cubed potatoes. Continue to cook over medium heat stirring occasionally for 25 minutes or until potatoes are tender.

Add chopped green chile, garlic salt, pepper, salt, cumin, and oregano. Reduce heat and simmer for another 15 minutes then serve.

Traditional Green Chile


  • 1 tablespoon canola oil
  • 12 cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons flour or 2 tablespoons whole wheat flour
  • 14 teaspoon ground cumin
  • salt and pepper, to taste
  • 1 12 cups pork stock or 1 12 cups chicken stock
  • 1 cup chopped roasted and peeled new mexico pepper, fresh is best, then fresh frozen
  • 14 teaspoon dried oregano
  1. In a medium sauce pan, saute the onion and garlic in the oil over medium-high heat, until tender (about 3 minutes).
  2. Stir in the flour, cumin, salt and pepper and cook over medium heat, stirring, for 2 minutes.
  3. Stir in the stock and simmer until thick and smooth.
  4. Stir in the chiles and oregano.
  5. At this point you may cool, and store in refrigerator, covered, for up to one day.
  6. To serve, heat thoroughly.
